Easy Pumpkin Cookies

What You’ll Need

  • 2 1/2 cups all-purpose flour

  • 1 teaspoon baking soda

  • 1 teaspoon baking powder

  • 1 teaspoon ground cinnamon

  • 1/2 teaspoon ground nutmeg

  • 1/2 teaspoon salt

  • 1 1/2 cups granulated sugar

  • 1/2 cup butter (1 stick), softened

  • 1 cup canned pumpkin

  • 1 large egg

  • 2 teaspoons vanilla extract, divided

  • 2 cups powdered sugar, sifted

  • 3 tablespoons milk

  • 1 tablespoon butter, softened

Putting It Together

  1. Preheat your oven to 350 degrees (saves so much time if you don’t forget)

  2. The therapeutic part! Combine flour, baking soda, baking powder, cinnamon, nutmeg and salt in medium bowl. Beat sugar and 1/2 cup (1 stick) butter in large mixer bowl until well blended. Beat in pumpkin, egg and 1 teaspoon vanilla extract until smooth. Gradually beat in flour mixture. Drop by rounded tablespoon onto prepared baking sheets.

  3. The magic happens! Bake for 15 to 18 minutes or until edges are firm. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely. (This is a wonderful time to start cleaning up and resetting your kitchen)

  4. The topping! Combine sifted powdered sugar, milk, 1 tablespoon butter and remaining 1 teaspoon vanilla extract in small bowl until smooth. Drizzle over cookies.

  5. The REWARD! After you’ve allowed your frosting to setup, display your cookies on a dish such as a platter or pedestaled cake plate. Show off your creation to your friends and family. Feel proud!

Magen’s Vanilla Bean Cupcakes

  • 3/4 cup milk

  • 1 vanilla bean or 1 tsp vanilla paste

  • 1 and 2/3 cups all-purpose flour

  • 1/2 tsp baking powder

  • 1/4 tsp baking soda

  • 1/2 tsp salt

  • 1/2 cup unsalted butter (melted

  • 1 cup granulated sugar

  • 1 large egg

  • 1/4 cup plain yogurt

  • 1 tsp vanilla extract

Putting It Together

  1. Cut your bean in half and scrap out the middle into a saucepan, pour in milk, place vanilla bean pods in and stir.

  2. Heat milk and vanilla until it is hot but not boiling. Remove from heat and let sit for 20 - 30 mins then remove the pods.

  3. Preheat Oven to 350 degrees.

  4. In a large bowl, combine all your dry ingredients with a whisk.

  5. In a separate large bowl, add butter, egg, sugar, yogurt, cooled vanilla milk and vanilla extract. Beat until well combined and smooth.

  6. Gradually and slowly add dry ingredients a little at a time. Making sure there are no large lumps.

  7. Fill cupcake liners 3/4 full and bake for 15-18 mins


Frosting

  • 1 cup unsalted butter (softened)

  • 5 cups powdered sugar

  • 1/3 cup milk

  • 1 tsp vanilla extract

  • a pinch of salt

  1. In a large bowl, beat butter until whipped.

  2. Add in powdered sugar, milk and vanilla. Beat on low speed and the increase to medium until well combined.

  3. Add salt to taste
